He wanted a dessert he could call his own. He started with Greek yogurt and turned it into a frozen swirl, served in a cup with the toppings you choose.
Niko liked the loud side: the sizzle on the grill, the spatula and the orders called out at the counter.
He built a sandwich from ground beef, American cheese and his own Greek sauce, in a pita. That became Niko's Chopped Cheese.
